I tend to play 6+ hours a day, but I sit in front of Discord from about 8a to 1a most days.
How long have you been playing Minecraft in-general?
Its been a long time; It was during the Wrath of the Lich King or Mists of Pandaria of WoW, I think.
How long have you played Modded Minecraft?
About 3 years. My first mod pack was e2e on a friend's private server. With friends like this, who needs enemies?
In what ways have you already helped the server?
I generally just try to bring a positive attitude to the [e2e] world. I don't know if you count it as kind and helpful or maliciously filling up their inventory, but I did try to give Evglela 18 or so stacks of Quarts blocks.
In what ways do you plan to help the server after you become a staff member and how will holding your requested rank help you do that?
Why do you want to become a moderator/admin?
Intentionally combining the last two questions:
I am relatively new to MMCC, but I immediately noticed the friendliness of those that I've been able to interact with and in the times we are going through, this is a precious commodity. I saw the call for help in Discord and decided that I would offer my time to help the community. I would also like to learn more about the mod tools available and the finer points of an MC server management so I can help my Extra Life team better with our 2021 fundraiser.
Why do you play on Modded Minecraft Club rather than other servers?
A couple of reasons. I am happy by the strong no-griefing stance that the community has taken. Outside of pvp-style servers, I see MC as a community builder and a way to share your imagination with others. I have friends with private servers, but those are ghost towns and I wanted people to at least talk to.
In what ways would you improve the server if you owned it?
Quite frankly, I'm not sure since I've never owned a successful MC server. I did try to host one in Azure a while ago using my amazing skills in bash and Linux (read: 0 at the time), but the vanilla install crashed more than e2 and I couldn't make a successful auto-restarter.

The only times I've been banned is from my work's slack channels because of the good dad jokes.
Why should we choose you over other applicants or maintaining our present size?
I can't speak to other applicants and why I might be a better choice. I generally just try hard at keeping the peace and making people happy while being around more hours than is healthy and avoiding drama.

What advice can you give to deal with people who have trouble acting maturely?
Life happens, people have bad days. The best solution for everyone is to try and help this person out. Covid and 2020 is unpleasant at the best of times and we've got to look out for one another. Ultimately though, others shouldn't suffer because of it getting rid of them (mute/ban) if its out of control.
What would you do as a moderator or admin if a new player joins and spams the chat with suggestions to make the server better?
Good ideas can and should come from everyone; however spam is quite a pain in the... Like with everything, if you are disrupting people and lessoning the enjoyment everyone around you, then a little duct tape (mute) can help.
What would you do as a moderator or admin if a player was griefed but they did not claim their build?
First and foremost, I would do what I could to help get everything back to normal before it was griefed and try to cheer them up with a great dad joke* (or you know, get banned for how facepalming it is).
Once the player or group was okay, I'd then turn to the person/group that griefed them and see what happened. I've seen some amazing bases in e2e and on Reddit that would certainly pass for world gen. Honest mistakes can happen, but if someone is going to be malicious, then they can sit in the timeout corner (ban) until they've learned their lesson.
Would you respond differently if they claimed their build? If so, how?
I've been thinking on this answer for quite a while and I think the only difference is that I would try to figure out how the claim boundaries were ignored so we can work to get that fixed.
What would you do if a player joins the server for the first time and suddenly brags in chat about having many more items than they should have at that point in the game?
I'd probably congratulate them and see if they'd tell the tale of their great fortunes - basking in the glory of others is great. Loot boxes and dungeon chests can have great finds in them - I got an Axe of the Wyvern in my second or third quest reward.
But if things felt off, I'd look into their luck a bit deeper and if it wasn't come by honestly, then the timeout corner is going to get busy.

Discord is already 2F and uses a password from my password manager; I hadn't done this with MMCC forums or MC, as there isn't much I my account can do, but this is easily changed.

Having not been a moderator for an MC server before, I would look to this as a learning experience. I'm a salaried, work from home, single-ish, programmer with chronic insomnia, so I am around fairly frequently, even if I am just lurking.
Often, because of my background, I can come across as mechanical or scripty and that can be interpreted as dispassionate. Community building, be it my in my dev team or one such as this, is something I find myself enjoying and I try to hold myself back because, according to my boss, I can be a bit intense. I definitely didn't think 3 years ago that shooting colleagues with nerf darts would be something we intentionally do in front of interview candidates, but it sets the mood for day-to-day life.
